Eggplant with Minced Pork

Introduction

Ground pork and chunks of eggplants absorbing the flavorful sauce that is made spicy and earthy from the Chinese chili bean paste

Steps

  1. Slice eggplant into thick segments and cooked in 200ml hot oil (130°C/266°F
  2. for 1 minute then set aside
  3. Stir-fry minced meat till medium rare. Add chopped garlic, ginger and S.J. Chili Bean Sauce, stir-fry for another 30 sec
  4. Add water, soy sauce and sugar to Step 2 then braise eggplant in it till it boils
  5. Add rice vinegar and corn starch water into Step 3. Sprinkle green onion before serve
